”Friebel's Butcher’s Plate“
Blood and liverwurst, small knuckle of pork, sour cabbage, boiled potatoes

Friebel, an innkeeper at the Molken market at the end of the 18th century, was famous throughout Berlin for his Friday butcher‘s feasts. To show his guests that his work was done, he put on a fresh white apron and stood in front of the shop. This was the birth of the butcher‘s white banner with ”fresh sausage“ written on it.

The butcher Cassel in Potsdamer Street 15 was the first to take mildly smoked pork and marinate it in brine.
He deserves the credit for ”Kasseler Kamm“,  ”Kasseler Rippenspeer“ or ”Kasseler Rippchen“.

Berlin Knuckle of Pork

After the guest had enjoyed this hearty Berlin meal, the bone from the knuckle was carved to make runners for skates - in the days before skates with metal runners.

Schnitzel Holstein

Baron Friedrich von Holstein, a top-level civil servant in the Bismarck era, insisted on having his appetizer and main course together. His veal schnitzel was then served with three croutons, anchovies and German caviar, sliced pickles and red beets. Everything on one plate!
